This recipe is one of my favorites, but even more so right now because it calls for: pumpkin! I wanted to go ahead and share this recipe before it’s not acceptable to have pumpkin for lunch every day. It’s almost Christmas so you better get your fill.
There are so many things that I love about this recipe, not only is it hearty enough to keep you full while still being a very healthy recipe, its filled with ridiculously amazing flavor.
People are so surprised when they see this recipe and find out its part of my diet. There’s so much packed in this little bowl of goodness. My boss at work the other day even sarcastically asked, “Do you think you have enough food groups in there?” I think he was just a little salty he couldn’t have any.
This recipe calls for the following things: 80 oz chicken, 1 cup pumpkin, 1 cup quinoa, 1/2 cup red pepper, 1/2 chickpeas, 1/2 cucumber and a good squeeze of lemon.
This recipe is from Kayla Itsines’ food guide and what I love about her food recipes is that you can easily sub out an ingredient for something else you might like more. Apparently I’m really easy to please though because there hasn’t been a recipe I don’t like.
