Paleo Pancakes

Hey people,

As you probably noticed, I haven’t posted on here in a while because you know, life happens. With a new work schedule and recent stresses, I haven’t had the desire to do anything really, other than take care of myself.

During these recent changes/circumstances, I’ve actually felt like a different person (and not in a good way). I’ve been noticing that my body is reacting differently to foods  – foods that I normally eat with no problem and I’m not sure if it was the stress that sparked this or not, but I’m thankful I caught on quick.

My whole life I’ve been able to eat all kinds and ANY kinds of food. I love it all! Give me all the foods. Of course I would still have to watch what I ate to not gain weight, etc., but I never experienced being uncomfortable after the fact. That is no longer true, and although these foods that I am experiencing sensitivity towards are not necessarily bad foods, they’re foods that my body is not responding well too, and thats ok.

I really do try to take good care of my overall health and because dairy and wheat have been causing me really bad bloating and digestive issues, I figured I might as well just start eliminating these things from my diet and see what kind of results I get.

In just four days of trying a mostly paleo diet, I feel ridiculously great. I haven’t felt lethargic and I even feel leaner, without changing my exercise regimen. Not only that, but I’ve realized that a Paleo diet is not even as bad as it sounds.

Without further ado, here are some pancakes that I tried out this morning. OK, sooo yeah they might not be the prettiest thing you’ve seen, but they are OH SO tasty if you like bananas AND they’re ridiculously easy to make.

To make them all you do is: use one medium ripe banana + 2 eggs (I sprinkled some cinnamon in my batter for some extra taste) , mash it up in a bowl or use I food processor and cook them like regular pancakes using coconut oil. TA DA.

For the syrup which might even be better than the pancakes themselves, I mixed 3 tbs of agave and 2 tbs of cacao. Tastes like chocolate heaven! And you know the rest, add all the berries, nuts, granola, etc. that you could ever want.
