This is and incredibly easy dish to put together. Especially when you’ve already mixed beans and corn from leftovers in your fridge 😉 Not only is this a great veggie combination, its perfect for warm weather! Ingredients
- 1/4 green bell pepper finely chopped
- 1/4 cup pre-cooked corn
- 1/4 cup low-sodium black beans, drained and rinsed
- lime juice from 1 lime
- pinch of sea salt
- 1/2 avocado chopped
- 2 table spoons of chopped red onion
- two small leaves of cilantro
