This is the epitome of a lazy light lunch. Ok, I know what your thinking, “that does not look like something I’d want to eat”, but I promise that if you like avocado and don’t mind adding spinach to your smoothies, this is going to be a nice treat. Its so light that you might want to add a smoothie to your lunch plans.
Although this recipe consists of pasta, the sauce is pure delicious magic that is full of healthy goodies that aren’t going to leave you filling too full or bloated.
Ingredients
spaghetti ( I used brown rice noodles- they only take 5 minutes to cook!)
1 clove garlic
1 avocado
1 cup fresh spinach
1/2 cup pecans
1/4 cup basil ( I didn’t have any, but if you do, DO IT )
1 tbsp fresh lemon juice
1/2 cup hot water
salt and pepper to taste
While pasta is cooking, add the rest of the ingredients to your blender and blend until it turns into a smooth sauce. Start with 1/2 cup of hot water (add more depending on your consistency preference)
Toss the pasta with the sauce in a pan, until it has blended together nicely. I added diced tomatoes to mine, but if you’re feeling fancy I would add grated parmesan!
