The Quinoa Bowl

This recipe is a new favorite. It’s a new favorite for a couple of reasons: its colorful and jam-packed with endless amounts of nutrition. Quinoa, which is the base of this recipe, is much higher in fiber than most grains. And guess what it’s actually gluten free! Not to mention, with 8 grams of quality protein per cup of cooked quinoa, it is an excellent plant-based protein source for vegetarians and vegans. And thats not all, it is also loaded with magnesium and antioxidants.

And because of its texture and other characteristics, it is very easy to incorporate into your diet.

If you like asian inspired food, vegetables and something light for lunch or dinner. You should give this recipe a try. All I did was add crunchy broccoli (steam for 3 minutes then submerge in ice cold water to get to get that crunchy effect), shelled edamame, cabbage, shredded carrots, cucumber and spinach.

For a dressing I used: lemon, sriracha, brown sugar, and sesame oil.
Its light but spicy enough to get your taste buds aroused!
